The commonest wine and food matching resources will state shiraz is matched with meats and peppery barbeques. They might also say avoid seafood. But what they rarely say is that Marseille, France is the home of Bouillabaise and shiraz. The way the wine is made, blended and the manner in which the food is paired is the real consideration here. We are huge fans of Duncan's 2003 Leda Swan Shiraz (now Harris Organic Wines), and have oft mused on it's oldworldliness. In this way, it is the perfect match for olive oil rich seafood made in the Mediterranean style. Note that in The Rhone Valley wine regions of France, Syrah is rarely a variety produced independently. These wines will have Grenache, Marsanne, Mourvedre, Viognier (among others) as blends propreitory to the contolled region, and the producer.
